This spring, prepare for yet another unforgettable taste journey — a feast of bold flavours and impeccable craftsmanship.
Sylvester Soisalo
Sylvester’s illustrious career spans some of Europe’s most prestigious fine dining establishments. He has worked at the legendary Gordon Ramsay restaurant and several Michelin-starred kitchens across the continent. Refining his craft in top restaurants in London, Munich, Oslo, and Helsinki, he ultimately became head chef at Finland’s culinary icon, the flagship restaurant Palace, before launching his own celebrated establishment.

The drinks package will feature champagne from Boizel, a renowned French producer celebrated for its rich winemaking tradition and exceptional craftsmanship.
The philosophy of Champagne Boizel works seamlessly with Sylvesters own ideology and pursuit of perfection. Champagnes with extended maturation on the lees, made with love and attention to detail will highlight the flavours of the dishes and prove to you that Champagne is more than just beverage for wedding and birthday celebration.
Each cuvee has been selected to highlight and enhance the dishes that they are paired. The depth and character of Brut reserve will set the tone for the dinner, the Rosé Absolu will wow your taste buds with its charm and vibrance. The La Montagne will delight with its precision and elegance. We will end the meal with a special treat made available especially for this event. Boizels Ratafia is a passion project made in extremely small quantities to once again showcase the abilities and vision of the Family.
